Caring for cast iron without the mythology
Cast iron attracts more folklore than any other object in a kitchen. Most of it is wrong. Here is what actually matters.
Soap is fine
Modern washing-up liquid will not strip a properly polymerised seasoning. What strips seasoning is long soaking and the dishwasher.
Dry it on the heat
The single habit that prevents rust: after washing, put the pan back on a low burner for two minutes.
Thin oil, high heat, repeat
Re-season with the thinnest film of neutral oil you can manage. Thick coats go sticky.
